Indian kadi rice

Indian Kadi Rice is a delicious and flavorful dish that is made with rice and a yogurt-based curry sauce. Here is a simple recipe to make Kadi Rice at home:

Ingredients:

For Kadi:

1 cup yogurt
3 tbsp chickpea flour (besan)
2 cups water
1 tsp cumin seeds
1 tsp mustard seeds
1 onion, chopped
1-2 green chilies, chopped
1 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
Salt, to taste
2 tbsp oil
1 tsp fenugreek seeds
Curry leaves
For Rice:

1 cup basmati rice
2 cups water
Salt, to taste
1 tbsp oil
Instructions:

To prepare the Kadi, start by whisking the yogurt and besan in a bowl until there are no lumps.

In a separate pan, heat the oil over medium heat. Add cumin seeds, mustard seeds, fenugreek seeds and curry leaves and let them splutter.

Add chopped onions and green chilies and sauté until the onions turn golden brown.

Add turmeric powder, red chili powder, coriander powder, and salt. Sauté for a minute.

Now, add the yogurt mixture to the pan along with 2 cups of water. Stir well to combine.

Cook the Kadi on low heat for 25-30 minutes, stirring occasionally, until it thickens and the besan is cooked.

While the Kadi is cooking, prepare the rice. Wash the rice and soak it in water for 30 minutes.

In a pot, add 2 cups of water, oil, and salt. Bring the water to a boil.

Drain the water from the soaked rice and add the rice to the pot. Reduce the heat to low and cook covered for 15-20 minutes or until the rice is cooked.

Once the Kadi is ready, serve it hot with steamed rice.

Garnish with coriander leaves if desired. Enjoy your delicious and comforting Kadi Rice!
