Spice Khichdi

Khichadi is a nutritious and comforting one-pot dish that is commonly made in Indian households. It is typically made with rice and lentils, and can be customized with various spices and vegetables.

Here’s a simple recipe for making khichadi:

Ingredients:

1 cup white rice
1 cup yellow mung dal (split and peeled mung beans)
3 cups water
1 teaspoon turmeric powder
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon grated ginger
2 cloves garlic, minced
1 small onion, finely chopped
1 small tomato, finely chopped
1 small carrot, finely chopped (optional)
Salt to taste
2 tablespoons ghee or oil
Instructions:

Rinse the rice and dal in cold water until the water runs clear. Soak the rice and dal in enough water to cover them for at least 30 minutes.
In a large pot, heat the ghee or oil over medium heat. Add the cumin seeds, mustard seeds, grated ginger, minced garlic, and chopped onion, and sauté until the onion is translucent.
Add the chopped tomato and carrot, if using, and sauté for another 2-3 minutes.
Drain the soaked rice and dal and add them to the pot. Add the turmeric powder and salt to taste, and stir to combine.
Add 3 cups of water to the pot and bring to a boil. Reduce the heat to low and cover the pot with a tight-fitting lid. Let the khichadi simmer for 20-25 minutes, or until the rice and dal are cooked and the mixture is soft and creamy.
Serve hot with yogurt, pickle, or papad on the side.
Note: You can customize this recipe by adding other vegetables, such as green peas or spinach, or by using different spices, such as coriander or garam masala.
