How to make letti chokha.
Litti Chokha is a popular traditional dish from the Indian state of Bihar. It is a savory dish made with roasted wheat balls stuffed with a spicy mixture of roasted gram flour and served with mashed potatoes and eggplant. Here’s how you can make it:

Ingredients:
For Litti:
2 cups whole wheat flour
1/2 cup ghee or oil
1 tsp carom seeds (ajwain)
1 tsp salt
Water as needed
For the stuffing:
1 cup roasted chana dal (roasted gram flour)
1/4 cup finely chopped onion
2 tbsp finely chopped garlic
2 tbsp finely chopped ginger
2 tbsp chopped coriander leaves
2 tbsp mustard oil
2 green chillies, finely chopped
Salt to taste
Lemon juice to taste
For Chokha:
3 boiled potatoes, mashed
1 medium-sized roasted eggplant, mashed
1 medium-sized onion, finely chopped
2-3 green chilies, finely chopped
2 tbsp mustard oil
Salt to taste
Lemon juice to taste
Instructions:
In a mixing bowl, combine wheat flour, carom seeds, salt, and ghee or oil. Mix well.
Add water as needed and knead into a firm dough. Cover and keep aside for 30 minutes.
In a mixing bowl, combine roasted chana dal, chopped onion, garlic, ginger, coriander leaves, mustard oil, green chillies, salt, and lemon juice. Mix well and keep aside.
Divide the dough into equal-sized balls.
Flatten each ball with your hands and place a spoonful of the stuffing mixture in the center.
Seal the edges and roll into a smooth ball again.
Preheat the oven to 200°C. Grease a baking tray with oil.
Place the stuffed balls on the baking tray and bake for 20-25 minutes or until golden brown.
While the litti is baking, prepare the chokha. In a mixing bowl, combine mashed potatoes, mashed eggplant, chopped onion, green chillies, mustard oil, salt, and lemon juice. Mix well.
Serve the baked litti with chokha on the side. Enjoy hot!
Note: If you don’t have an oven, you can also cook the litti on a tawa or griddle over medium heat. Cook the litti on both sides until golden brown, then finish cooking on a low flame till it is cooked through.
